We made a very special catch at ROSSO: a whole blue fin tuna from the north-east of the Atlantic got caught in our nets. And we already have so many ideas how we want to prepare it for our guests.
A fish that you only imagine in the most beautiful dreams: The blue fin tuna that we just received weighs a full 35 kg and is over 1.2 meters long. A fine specimen.
We are in the process of breaking it down into special cuts and preparing it for the following dishes:
- Porterhouse Steaks (serves 2).
- Ventresca Primecut fillets. The ventresca (belly meat) is undoubtedly the most precious part of the tuna: it is particularly sought after for its tender flesh and delicate taste.
- Tuna Tartare
- Tuna carpaccio, lightly smoked
